No-Bake Energy Bites
Yield: 18-20 bites
Ingredients:
- 1 cup oatmeal
- 1/2 cup peanut butter or soy butter, almond butter, cashew butter, sun butter,
- 1/3 cup honey, or agave nectar
- 1 cup coconut flakes or crushed cereal, wheat germ, whole wheat flour, granola, cocoa powder.
- 1/2 cup ground flaxseed
- 1/2 cup mini chocolate chips or carob, raisins, cranberries, crushed nuts (almonds, cashews, walnuts)
- 1 tsp vanilla
Directions:
- Mix everything above in a medium bowl.
- Let chill in the refrigerator for half an hour.
- Roll into balls.
- Store in an airtight container and keep refrigerated for up to 1 week.
