No-Bake Energy Bites

Yield: 18-20 bites

Ingredients:

  • 1 cup oatmeal
  • 1/2 cup peanut butter or soy butter, almond butter, cashew butter, sun butter,
  • 1/3 cup honey, or agave nectar
  • 1 cup coconut flakes or crushed cereal, wheat germ, whole wheat flour, granola, cocoa powder.
  • 1/2 cup ground flaxseed
  • 1/2 cup mini chocolate chips or carob, raisins, cranberries, crushed nuts (almonds, cashews, walnuts)
  • 1 tsp vanilla

Directions:

  1. Mix everything above in a medium bowl.
  2. Let chill in the refrigerator for half an hour.
  3. Roll into balls.
  4. Store in an airtight container and keep refrigerated for up to 1 week.
