No-Bake Energy Bites
Yield: 18-20 bites
Ingredients:
1 cup oatmeal
1/2 cup peanut butter or soy butter, almond butter, cashew butter, sun butter,
1/3 cup honey, or agave nectar
1 cup coconut flakes or crushed cereal, wheat germ, whole wheat flour, granola, cocoa powder.
1/2 cup ground flaxseed
1/2 cup mini chocolate chips or carob, raisins, cranberries, crushed nuts (almonds, cashews, walnuts)
1 tsp vanilla
Directions:
Mix everything above in a medium bowl.
Let chill in the refrigerator for half an hour.
Roll into balls.
Store in an airtight container and keep refrigerated for up to 1 week.
